The Quick Polenta with Porcini by Antersdorfer combines smooth cornmeal with the earthy aroma of porcini mushrooms and parsley. Whether creamy or fried into slices, this dish is quick to prepare and endlessly versatile.
Preparation: Boil 600ml broth, reduce heat and slowly stir in the contents. Switch off the stove and let sit for 5 minutes. Season with salt, pepper or vegan Parmesan to taste. For polenta slices: Spread cooked polenta finger-thick on a damp board, let cool, cut into rectangles and fry in a pan until golden brown. Tip: Sprinkle with fresh herbs.
