- 300 ml Plant-based drink, e.g. oat milk
- 20 g fresh yeast
- 2 tsp salt
- 100 ml neutral oil, e.g. sunflower oil
- 800 g Light flour, e.g. wheat, spelt
- 300 g Cooked pumpkin (ideally an orange variety such as Hokkaido, Muscat, etc.)
- 1 tsp Sugar (to activate the yeast)
These delicious pumpkin rolls are a real treat for the taste buds and the perfect snack straight from the oven.

Instructions
- Activate the yeast by mixing it with 1 tsp sugar, 1 tbsp flour and lukewarm water.
- Mix all the dry ingredients in a bowl. In a separate bowl, blend the cooked pumpkin, plant-based milk and oil using a hand blender. Now combine the dry and wet ingredients and add the activated yeast. Knead into a smooth dough.
- Leave the dough to rest, covered, for 50 minutes.
- Divide the dough into 9 pieces on a floured surface and shape them into balls. Now use an uncoloured, plastic-free string and tie it around each roll 6 times.
- Leave the rolls to rise again, covered, on the baking tray for a further 10 minutes and preheat the oven to 200°C (fan).
- Bake the rolls for 18–20 minutes. Leave to cool briefly, remove the string and enjoy!
