Light Demeter spätzle made from spelt by Naturata – spelt spätzle for fine nutty pasta enjoyment.

For over 30 years, the Demeter spelt for Naturata spelt pasta has come from a Demeter producers’ association with around 25 farmers from the Swabian Jura in Baden-Württemberg. Early quantity agreements, fair prices and reliable purchase commitments guarantee the farmers an economic basis for their farms. The required grain quantities are agreed upon before sowing so that the crop rotation can be specifically aligned to them. The soil and weather conditions around the Swabian Jura are optimal for traditional spelt varieties that give Naturata pasta a fine nutty flavour. Only a few kilometres away is the processing plant where the pasta is produced. The short transport routes, just like the production according to strict biodynamic criteria, contribute to the protection of natural resources.

The light spelt spätzle are made from spelt semolina. For dough preparation, the semolina is continuously mixed with drinking water and kneaded until the required consistency is reached in order to press the dough through the corresponding moulds. After shaping, the spätzle go through a steam bath. In the stepwise drying process, it is ensured that the moisture is not removed too quickly from the noodles and that a beautiful surface is formed. Depending on the shaping, drying takes place at 70 °C to 100 °C.
